As promised...FOOD!

Okay, so I FINALLY made the Chocolate Brownie Waffles from VCON and let me tell you they will not disappoint. They were so good with a little maple syrup and some bananas and berries. MMM. I literally had one for dessert that night too (the leftovers are perfect when thrown in the toaster oven for a few minutes). Also from Veganomicon...
The Leek, Potato, and Bean Cassoulet! The ultimate in comfort food. I absolutely loved this dish, perfect on a cold wintry night. The biscuits were delicious too. I love how they just cook right on top. Athena only would eat the potatoes and biscuits, but at least I didn't have to make her a separate meal. I even gave Ro some bites of peas, carrots, and beans. He loved it since I don't usually give him any food with much flavor. I give this one 5 out of 5 stars!
From The Joy of Vegan Baking, Pumpkin Spice Bread. I loved these loaves and in case you are wondering those are vegan chocolate sprinkles on top! The recipe is fat-free but I added some coconut butter because I thought it would make it more decadent, it did.
From EDBV, the sensational chickpea patties. These were indeed sensational, so sensational that I didn't get a picture of them looking all cute in their pita pockets, but just visualize please, they were awesome. I took Dreena's advice and whipped up some balsamic flax oil to drizzle on them and it was a great pair. I also had one with barbeque sauce for lunch the next day, and the following day I ate one with dijon mustard. They were good all ways. I can't wait to make them again. They did fall apart more than I expected, so my main recommendation is to let the mix sit a full 24 hours before you try to form the patties, it was much easier that way.
Also from EDBV, the terriyaki quinoa with ginger cashew tofu. That tofu is phenomenal and so easy! I loved how the sauce thickened up and the tofu browned a bit. Mmm, mmm, mmm! And don't get nervous, we didn't eat an entirely tan colored meal... I served it with this cucumber, orange, and kale salad! I made an apple cider vinaigrette dressing which tasted so good.
Yesterday, my SIL picked some chard from our garden. I'm too lazy! So I used up this giant bunch of fresh chard to make a random mixture of chard, red onions, and seitan with Indian seasonings. Turned out quite well. I served it with some sliced avocado and hemp seed nuts!
That is all for this week, I was proud to have cooked 4 really good dinners in one week. I hope to keep up the good work!

Yum!! Your appeal to food matches mine. I love all of these recipes and have tried/ hope to try in the very near future. I REALLY need to try those waffles. They sound like the perfect dessert for someone who doesn't have time to make them in the morning. I have been inspired. Thank you!

I'm not a Vegan, but I'd be happy to eat like one if this is the kind of stuff I'd get. My Brazilian carnivore of a husband is holding me back.

Great job Sara! I wish my week looked like that. I need the recipe for the Leek, Potato, and Bean Cassoulet I think Jason would love it. He will not say it but I think he is getting a little tired of the veggies and rice or noodles I have been cooking.

YUM! All those pics look scrumptious!!! I've been eating a huge amount of chard lately too. I would love the recipe for the waffles and the stew/dumplings please!

I've made the Leek and Bean Cassoulet twice, and I am so so in love with it. Mmm. Maybe again for dinner tonight.
I am so jealous that you sill have a garden! Mine is covered in 2 feet of snow. Haha.

Mmmm!How do you have time for all that cooking with your little ones??
Jeremy and I like to watch Iron Chef and get ideas. From that, he tried to make chickpea fritters one day. When we ate them we realized that he had made falafel basically. Not what we were expecting. I have been cooking with pearl barley (mushroom and barley soup and barley and lentil salad). I really like it. It has a good texture.
