
For dinner I made a gigantic Chana Masala. I added some kidney beans so it isn't exactly Chana, but it was a good combo. I used the following recipe and I really can't say enough about how good it was. I served it with wild rice and it was a good pair.
2 Tbs Coconut Oil (or a little more if you are feeling naughty)
1 medium onion chopped
4-6 cloves of garlic minced
1 tbs curry powder
1 tbs garam masala
4 tbs tomato paste
2 cans of chickpeas drained (or kidney beans)
Juice of 1 lime
1 can coconut milk
1 tsp salt
1 tsp red curry paste
1 tbs unrefined sugar
1 cup frozen mixed veggies
black pepper to taste
Heat the oil on medium heat and fry onions until they are slightly browned.
Add garlic, curry, garam masala, tomato paste, and red curry paste. Stir until onion are well coated.
Add rest of ingredients except frozen veggies. Simmer 5 minutes, stir occasionally.
Add frozen veggies and simmer about 5 more minutes until everything is warm and delicious.
Serve over rice

I made these this morning from
VLV, they were so easy and yummy. I used coconut oil in place of canola oil and it seemed to work perfectly. I will definitely make them again and maybe add some nuts next time around. They are a cross between a muffin and a cookie. Kinda crunchy on the outside but doughy inside. We all gobbled them up!
