For dinner I made a gigantic Chana Masala. I added some kidney beans so it isn't exactly Chana, but it was a good combo. I used the following recipe and I really can't say enough about how good it was. I served it with wild rice and it was a good pair.
2 Tbs Coconut Oil (or a little more if you are feeling naughty)
1 medium onion chopped
4-6 cloves of garlic minced
1 tbs curry powder
1 tbs garam masala
4 tbs tomato paste
2 cans of chickpeas drained (or kidney beans)
Juice of 1 lime
1 can coconut milk
1 tsp salt
1 tsp red curry paste
1 tbs unrefined sugar
1 cup frozen mixed veggies
black pepper to taste
Heat the oil on medium heat and fry onions until they are slightly browned.
Add garlic, curry, garam masala, tomato paste, and red curry paste. Stir until onion are well coated.
Add rest of ingredients except frozen veggies. Simmer 5 minutes, stir occasionally.
Add frozen veggies and simmer about 5 more minutes until everything is warm and delicious.
Serve over rice
I made these this morning from VLV, they were so easy and yummy. I used coconut oil in place of canola oil and it seemed to work perfectly. I will definitely make them again and maybe add some nuts next time around. They are a cross between a muffin and a cookie. Kinda crunchy on the outside but doughy inside. We all gobbled them up!

I am so behind in reading your blog and now I have a lot to say. A guy in Concord left his kid in the car (he forgot he was in there when he drove to work!!) and the kid died. What kind of carrier are you carrying Rowan in, in the camping pictures? When did you start putting him in a front carrier? He is soo long now and a super cutie!
That food looks so good I am going to have to make it!

It is the ergo carrier. It is my favorite by far and can worn on the front and back comfortably. They say wait until 4 months (i started at 3 but he was huge) unless you buy the infant insert (which is like a glorified blanket and not worth it in my opinion). It is great and you and Jeremy can both wear it!!!

That looks excellent, all of it!! Bundles of bodacious goodness there in the banana oats. And you can't beat chana masala, one of my faves. Have you seen the chana masala burgers at Trader Joe's???!! They're terrific.
