Peach upside down cake



This IS good, but not very original. Every vegan blogger is making it right now, but at least it doesn't suck! I followed the Fat Free Vegan's recipe with the extra sugar, orange instead of lemon, and spelt flour instead of unbleached - I never seem to follow recipes exactly! Totally worth your time to make this, even if it means a fussing baby strapped to your back and a toddler refusing to nap who keeps interrupting the process, and I mean totally.

I used Sucanat, but not extra, and my flour was whole wheat pastry. I tried a bite of it plain, and it's just not the same without a bit of vegan ice cream in the same bite.

I think this may have been the first upside-down cake I've had in my life.

MMM, I'll have to make it again and serve with the ice cream suggestion, sounds great. And I used evaporated cane sugar since that is all I had at the time.

It was my first upside down cake too!
