Vegan MoFo Day 20 - OK dinner
I often cook without recipes and sometimes it just doesn't come out the way I planned. This was one of those nights. It wasn't awful, everyone ate it, but it wasn't what I was going for. I wanted to make some green rice using up some diced up greens, but the flavor was kind of bland in the end. I decided to throw it all in a tortilla and that made everyone happy. I think I was getting carried away with some of my green food successes with the kids, as this one was not a hit. I had to put chipotle hot sauce on mine, and the kids "needed" ketchup. The next day, Chris ate the left over rice with some balsamic vinegar, and that wasn't bad. Anyway, I'm not sure why I posted an unappetizing looking meal tonight, I guess just to show that sometimes we just eat what we've got, nothing special.

It's better to have eaten it than thrown it away! And we learn from these little mishaps at the end of the day.

hey, they can't all be winners. it's good to try things out cooking-wise, you never know, sometimes they work well.
