Vegan MoFo Day 21 - Lunch Bunch and canned peaches

Today Athena stayed for "lunch bunch" at her school for the first time. Last year she never wanted to, even though I kept asking, but today she was ready. I didn't take a picture of her lunch, but I packed her a hummus sandwich on sprouted bread, spicy nori strips, 2 mini apples, organic whole wheat crackers, and an organic juice (a rare treat around here). She ate everything but her crusts (no surprise) and one of the apples. It was all packed in a laptop lunchbox and it worked very well. She was in a great mood when I picked her up at 12:45 (didn't want to push it on her first day), I was thrilled. She goes to school 3 days a week (9-noon), and I'm hoping that once a week she'll stay later to give me more time with Rowan and to get some errands done. Plus, next year will be a much longer day so it seems like good practice. Today, Rowan and I were able to walk to Whole Foods to pick up stuff for her school Halloween party. We are bringing bagels with tofutti cream cheese (the yellow one without the hydrogenated oils), and some special Halloween sprinkles (orange sugar sprinkles and chocolate sprinkles). It doesn't sound that good to me, but it made Athena feel like we were bringing more of a treat since she got the idea in her head that we were bringing cupcakes and we are not. Her school has a policy where you have to bring store bought food or make it at the school, but with Rowan in tow, I just can't imagine making 2 dozen cupcakes at her school in a totally non childproofed kitchen. And we only have 1 vegan bakery in town, and it would have probably cost me $30 or $40 to get enough cupcakes for the class which just isn't happening.

So, this leads me to the canned peaches. While at Trader Joes tonight, I saw a new item "organic canned peaches in light syrup" and for some reason I bought them. What am I going to do with them? I've never bought canned peaches before and am not sure why I did it tonight. So please, if you have any ideas, then let me know as I really have no clue.

I was just going to email you and ask what you were sending for Athena's party. We ended up getting mini-cupcakes from Whole Foods, which aren't vegan and really aren't very healthy either. Well, at least they have better quality ingredients and no food coloring.

My dad keeps canned peaches in the fridge for smoothies. He mixes them with protein powder in the blender. I have simmered them in maple syrup with a cinnamon stick for waffle topping.

When I was pregnant, I ate those jarred peaches with a fork, from the jar. Same with the pears. Sometimes I would have to force myself to stop before I finished off a jar in one sitting.

So, in short, I'm no help.
