Sometimes being a mother of 2 young children with busy extracurricular activities means I don't make the elaborate meals I intend to. Some nights I just open my fridge and try to pick a vegetable I know they'll eat, a protein, and a carb. Tonight it was peanut noodles with chickpeas and spinach. And they gobbled it up. It is a cinch to whip up something like this quickly because I don't have to look at a recipe or anything. I just KNOW what I need. To finish off the meal I gave them each a bowl with fresh organic oranges, raisins, raw cashews and coconut flakes. There, I'm done, and on to the next part of our evening...
