Don't get too, excited, no real recipe here today, but I did get the chance to try out the "Cherrybrook Kitchen" brand box of vegan muffins. I usually love to bake from scratch, but these little boxes definitely come in handy when pressed for time, or for a take along baking experiment with Grandma (or someone else who may not have much experience with vegan baking). The recipe calls for 1/3 cup oil, but I subbed that with applesauce and just added 2 tbsp of oil. These turned out perfectly, and the kids loved them because they are full of sugar:). You could definitely put some frosting on these and call 'em cupcakes. We will make these again if we find them on sale, or need a special baking treat. They were so easy and delicous.

funny, i just bought these from GTM to make into cupcakes for my mom's bday so i'm glad they are yummy!
