




For dinner last night, I wanted to use up some of the huge amount of black beans I had prepared in the pressure cooker (I LOVE my pressure cooker just for the beans). I'm fond of the "Celebrity Adzuki Bean Rice Cakes" from Vive Le Vegan, but I pretty much never follow a recipe in its entirety. With this recipe, I pretty much followed the recipe, but I added a cup and a half of spinach to sneak in some veggies to my 2 kids. I also didn't have bread crumbs, so I crumbled up some stale crackers, but that still wasn't quite enough. I then added a little bit of vital wheat gluten and hoped that would do the trick. I think I also added some chili powder. Once the mushy mess had chilled in the fridge for 30 minutes, I formed them into patties (it made 16!) and baked them on a cookie sheet at 400 degrees for 30 minutes, flipping them over halfway through baking. Mmm, mmm, mmm. These were so good. My 5 year old loved them, ate 2, but my 2 year old only had a few bites. My husband made up for Rowan's lack of interest and ate 6 of them! We served these up with some sweet potato and russet potato fries for our "fries-day" tradition, and one of the best tasting mangoes I've had all year.

Heck they looks good. I like burgers that can be baked and these look like they held their shape well.
